Vegan Avocado Ice Cream

This recipe is so easy, it’s taking one of my favourite smoothies and just simply freezing it! Recently Tim and I have been trying to eat a more plant based diet after watching many food documentaries. I HIGHLY recommend watching Cowspiracy (which is currently on Netflix!), it focuses on the impact agriculture has on our environment and how our eating habits are completely unsustainable. This avocado “ice cream” has got me thinking about a gazillion flavour combinations; can’t wait to start experimenting!

Serves: 1-2


1/2 avocado
1 banana (frozen or not)
1/3 cup unsweetened almond milk (alternative: coconut or soy)
1/2 lemon
1 tbsp maple syrup


1. add avocado, banana, almond milk, juice of 1/2 a lemon and maple syrup to a blender
2. blend until smooth
3. store in a freezable container and freeze for at least an hour (it will take less time if your banana was already frozen)
4. scoop and top with whatever your heart desires! Walnuts paired very well.

Tim and I shared this after I got a nice photo. It was super creamy thanks to the banana and avocado! Using coconut milk would make this ice cream even more rich; will be sure try that next!
